”Le Gangster” is a very simple & quick to prepare recipe.
The ingredients needed are the following:
- Pork Loin
- Dijon Mustard (1 tbs, maybe a bit more to taste)
- Red onions (chopped but not too finely)
- Fresh shallots (chopped)
- Fresh chives (chopped)
- Salt (pinch)
- Pepper (pinch)
- Olive oil (drizzle)
- 5-6 strips of bacon (depending on length of pork loin)
- Preheat the oven at 400 degrees C.
Prep time is about 10 minutes
Ideal cooking time is 25-30 minutes, maybe it’s longer for you. (depending on variety of reasons: A. your oven sucks or B. you like dry meat)

Rub the pork loin with the dijon mustard, the red onions, shallots & chives. Drizzle with olive oil.
Add pinch of salt & pepper. Make sure the entire pork loin is rubbed with the ingredients. Wrap the pork loin in bacon strips.
Cook for 25-30 minutes at 400 Celsius and enjoy!
